The problem is that removing every single cut up piece would not really be useful - that would just be the equivalent of deleting the whole object that was being trimmed.

That option where you can push "Done" (or right-click) without selecting any pieces is if you don't want to remove anything and instead keep all the cut up pieces.

So for example say we want to trim this circle with the 2 lines as the cutting objects:



After you have selected the cutting objects, Trim will show you all the fragments where the circle has been cut by the line pieces. If you want to get rid of some part of the circle, you can select those now and then push Done (or right-click):






However, if you want to just cut the circle up into pieces and not remove anything yet, you can do that by pushing "Done" or right-clicking without selecting any pieces at all. That will cut the circle up and leave all the pieces behind. At first it will look the same as it originally did but if you go select things you will see that there are now multiple pieces like this:
