That's kind of a neat feature request. Right now, we have to manually trim the curve at the mirror axis point, mirror the curve and then join the curves. It's not so bad, but if you have to do it enough times, I can see the benefit of automating it a bit.
I wonder if this idea could be expanded to an on/off "mirror mode" where you could turn it on, define the mirror axis/plane, and everything you do is mirrored automatically until you turn it off. This might reap the maximum benefit of diving into a new symmetry script. You'd be creating a symmetrical curve right from the start with this way of looking at it.
