Hello, re: Layers there is a mechanism in MoI called "Styles" that is similar to layers, you can assign an object to a style which will set its display color and you can use the Scene Browser to hide/show/select/lock/unlock all objects on that particular Style.
You can also do a type of grouping by assigning a name to an object by clicking on the name line of the properties panel. Named objects will show up in the "Objects" section of the scene browser and you can then hide/show/select/lock/unlock them in one action there. Multiple objects can share the same name and work as set that way.

The tutorial appears to use a bunch of customized shortcut keys and plug-ins, you would need to go into Options > Shortcut Keys and set up the shortcut keys and install the same plug-ins that were used there to be able to follow that tutorial.
