Hi fwgdocs, there are some step by step tutorials in the main help file documentation here:
http://moi3d.com/2.0/docs/tutorials.htm

But I am not aware of any step-by-step tutorials specifically on creating aircraft models. In general vehicle modeling is actually quite advanced and you should work for a while on basic skills first before trying to tackle advanced projects.
