I was just wondering, is there a way I can edit the default colours / styles that a new project begins with?

Yup - get things set up with all the styles the way you want them, and then save that to a 3DM file. Then set that 3DM file as the startup template under Options > General > "Template file".

When you start a new project (either on launch of MoI or when doing File > New), all the stuff from the template file like styles and viewport settings will be read in and used as the default.

Well, yellow is basically reserved as the selection color, and gray is used to indicate the "locked" state, so since those colors were already being used for other things it was not so good to put them on the default style list.
