I think I know what is happening, you're tracking along a surface normal line for one of the points.

If you look closely, you will probably see a long dashed line with a label that says "normal" on it - that is the tracking line that is messing up your curve.

Probably the easiest way for you to get rid of that at the moment is to disable Straight Snap on the bottom toolbar (click it so it is not orange). That will eliminate that tracking line which I can see can pretty easily disturb drawing in that 2D viewport.

I probably should disable that surface-normal line when drawing in a 2D viewport. I've been actually thinking of disabling all the stuff related to the new-for-v2 "on surface" object snap in those 2D views because they can tend to get in the way of simple 2D drawing.

I will try to get these tuned up for the next beta so that they won't cause this problem anymore, but for the moment turning off Straight Snap should do it.

I hope this makes sense and is helpful.

With Straght Snap ON
Get 3 things as drawing a line; variations--- tag "On Srf"; and/orTag "Normal, and/or construction lines
Special note. However, if I draw a series of lines separately, one after another, there are variations between each. Some are "twisted", some are "flat".

With Straight Snap OFF.
Consistently only the "On Srf" tag. Flat.
Doing repeat lines still all flat.

Think that clarifies that a gremlin is involved I think?
