Hi PaQ, thanks for the very clear bug report!
I have been able to repeat the problem over here and I've been looking at it.
It appears that the object actually gets messed up directly after the mirroring, it is just that the mirroring also copies the display mesh of the original object so you don't notice the problem until later on at some point when it gets re-meshed which is what happens on an undo.
It also does not seem to happen with V1, so it looks like it is a regression in the geometry library involving dropping curves to parameter space.
I'll be taking a look to see if I can narrow it down to a specific area and see if I can possibly roll that part back to the v1 state.
