Jonah,
this is what I'm used to with every modelling app. I have ever used.
with the light setup straight on the model from every angle,
I am able to see the model more clearly in my head, shapes, curves...
if I want nice shadows and soft lighting, I'll use my rendering software :)

Would someone mind to post an example of a wavy surface viewed "straight on", and also viewed at a few different angles? I am curious what the result is.

Sure, here is a quick one.
As you can see, the straigt on shows the highs and lows viewing white and black areas... not as pretty,
but in this "rare" case, one can still see this better in the camera view window when moving around the image
to check shape.

Everybody has their own preference. But for me, this is misleading feedback. Because you are getting nearly identical highlights in both the valleys and peaks, due to lack of shadows in the valleys. Also the shadows are going in opposite directions. On left side of the surface, they fall on left side of the peaks. On right side of the surface, they fall on right side of the peaks. There's nothing wrong with it. But it's somewhat unnatural to me...
