Is there a way to use Loft in V4 without capping ends like it was possible in V3 (there was a checkbox). It's super useful when need to go surgical patch things up on complex models.

Yes, it's the same in V4 as in V3, there is a "Cap ends" checkbox you can uncheck:

Hi Vitaly, it will not be displayed unless your loft has closed and planar end profiles.
