Hi,
I don't know if you are aware of the "Incremental Save" command but it allows easily creating multiple "versions" of the file you are working on so you can "go back in time".
Every time you invoke the command it saves the file you are working on but with a numerical suffix added that is incremented with each save.
So if you were working on a file TEST the first save would create TEST01, the second save would create TEST02 and so forth.
By default "ALT S" does that command.
