Ok, so first, it didn't even occur to me to click on Through Points, which is RIGHT THERE, so thank you for that.

I went down the rabbit hole though, and the Rhino HBar style command is what I was looking for. Except with construction lines. Is there a way to turn on construction lines while in point mode?

I managed to get the general shape I want by splitting it into segments.



I will try using Through Points on V2 and see how that works. I'm guessing much better. :)

Another question - On a shape like this, how do I maintain continuity of the entire surface? For example, I see a lot of Surfaces coming to points as they reach a control line. You can see that on the handle in the attached image.

In a sort of roundabout way, yes - if when doing a "point on curve" drag if you move the mouse outside the viewport and then release it while outside you can then go in and drag some construction lines before clicking the final target point.

Unfortunately basically you don't - that's a general difficulty when using that type of model strategy of building all the final edges and then surfacing it in a "patch by patch" manner.

In Rhino you could try the MatchSrf command to adjust some surfaces to be continuous with neighboring ones. It can be quite difficult though to get an irregular juncture spot to be tuned up on all sides though. Sub-d modeling can generally work better for generating a smooth-all-over type result from irregular topology.
