It works not with some programs...

Hi Pilou, yes in the current v4 beta there is now an option you can set for controlling the FBX file version.
It's on the Options dialog, under Import/Export > FBX options > "FBX version" :

Not inside of MoI. You would need to use a rendering program to assign textures.
