When lofting organic shapes it is usually best to use the loft>loose>exact method and reduce the amount of curves necessary to create the shape to as few as possible.
You also get the best surface if each curve used to create the loft has the same number of points on it.

Other lofting options quite often create tensions in the nurbs surface which create the distortions you are seeing.
