There isn't any way to adjust it with only the mouse, it only accepts typed in values.

You could get this one done by drawing a line before doing the helix, then open up the size dropdown (from the properties dropdown), and select the length of the line there, use Ctrl+C to copy it. Then when inside the helix command use Ctrl+V to paste that value into the Pitch field.
