Yes, you can flow in the reverse direction, from a curved surface onto a plane instead of the other way around.
To do that you just pick the curved surface as the base surface and the plane as the target.
I've attached an example - to do it, select the curve then run Transform > Deform > Flow, and pick the sphere as the base surface and the plane as the target - the curve will be applied on to the plane in the same relation it has to the UV space of the sphere.
