Hi Brian, I don't really know how you're getting it but one section of your points are on on the world plane where I would expect, and then the second half of your points are on a different depth.

What happens if you turn off all the snaps - that is click on "Grid Snap", "Straight Snap", and "Object Snap" in the bottom toolbar so they are not highlighted in orange anymore. Does that make any difference for you?

I am not able to reproduce your problem over here - I've attached what happens here when I use a control point curve clicking every point for it in the right-side view.


Are you possibly getting some construction lines kicking in? I mean do you see any long dashed lines popping up while you are drawing the curve?

Any other possible details that you can think of, like do you tend to use undo while drawing the curve a bunch, adjust your view, any stuff like that?
