Hi Mark - History is on by default for some commands like Loft and Sweep and off by default for others since it can sometimes tend to be surprising. But you can turn on history for the result of Flow by selecting the result of the flow (the resulting deformed object, not the original base object) and enabling history on it using Edit > History > "Enable update" button.
