I have the feeling this constant voxel size would give something a little bit boring, or too regular (quantitized). It's maybe a matter of taste, but I really like to find a balance between very tiny elements and larger masses. That's why I love the works from Vitally Bulgarov, like in this kitbash : https://vitalybulgarov.com/3d-kitbash/meg
I'm really far to have the recipe to reproduce this yet completely procedurally, but it's something I will continue to work on :)

The first time a say this I was a little bit skeptical, mostly because I was only looking at the 2D images :P, but I start to see some really cool stuffs done in 3D too now.
I would love to play with a system like that :)
