Hi Marco, I have not personally tested the Pascal GTX 1080 card myself, so I don't really have any direct first hand knowledge to give to you about it. However, I have not heard any problems about that card and I don't know of any reason why MoI should not run fine on it. Really any modern card should be fine I would think.
