Yup, that definitely helps! :) Using this method (especially hitting pause after every 20 seconds or so) really helped a lot.

But it still isn't what I would call "easy" for me to do yet... All together it will still take me probably around 2 days to produce one that I am satisfied with.

I would think that eventually as I get more practice at it, it will take less time.

It's a tough choice for me, because a lot of other people have told me that they prefer videos...

I would like to eventually have some translations of the audio tracks into different languages, that should help.

The problem with the written down step-by-step ones, is that I think they will take actually quite a bit more effort for me to do than the videos. You end up with quite a lot of writing and a lot of screenshots in that format.

It can also be more difficult for me to convey the same information written down, it can cumbersome to explain all the little details.
