There's an example of how to do a hand in a polygon sub-d modeling program here:

You can kind of get an idea from those how you would form a blocky outer hull formed of all 4-sided polygons and then subdivision smoothing blends all those together.
Sub-d modeling programs are specifically focused on constructing organic shapes with this technique unlike MoI.
